Baked Beef Stew (I’m not sure where I got this. But, so yummy and simple.)
1 (14.5 oz) diced tomatoes, undrained
1 cup water
2 tsp sugar
1 1/2 tsp salt
1/2 tsp pepper
2 lbs lean stew meat, cut in 1″ cubes
4 med. carrots, cut into 1″ chunks
3 med. potatoes, peeled and quartered
2 celery ribs, cut into 3/4″ chunks
1 med onion – chunks
1 slice bread, cubed
Put all ingredients in baking dish. Cover and bake for 90 to 120 minutes or until tender. Serve in bowls. Yield: 8 servings.
