Ever want pancakes but they just take too long to make? This is one for the oven and super EASY!
My kids love it! Great to take for a brunch or a lazy supper!
Maple Oven Pancake
1 1/2 cup biscuit baking mix (I like Pioneer buttermilk mi)
1 Tbsp sugar
3/4 cup milk (If you are out of milk – use half evaporated and half water)
2 eggs
1/4 cup maple syrup (Regular pancake syrup works great too.)
1 1/2 cup shredded cheddar cheese divided
Combine mix, sugar, milk, eggs, syrup and 1/2 cheese; mix well.
Pour into greased 13x9x2 baking dish. Bake uncovered at 425 degrees for 10 to 15 minutes.
Sprinkle with cheese (sometimes I sprinkle with crumbled bacon).
Bake 3 to 5 minutes longer until cheese is melted.
Serve with syrup.
I like to serve with fruit – it makes me feel healthier!
