Greek Layered Dip

Greek Layered Dip

Nothing excites my taste buds more than Greek food.  I crave it.

My youngest asked what Falafel was last week.  So when our Healthy Junk Food Night came around, we found some Falafel Chips.

AND Mommy made this slap-ya-Mamma-dip. Win!  Win!
(P.S. We don’t ever endorse slapping Mamas.  This is just a figure of speech.)

Greek Dip with Falafel Chips

Ingredients:

  • 1 block of cream cheese (I use Neufchatel.)
  • 1 tsp of dried dill weed
  • 3 tsp of minced garlic (I use the kind in a jar that stays in the refrigerator.)
  • 2 tsp of lemon juice
  • 1 1/2 cup of Hummus (We like Roasted Red Pepper – HEB brand.)
  • 1 cucumber, diced and seeded
  • 1 roma tomato, diced and seeded
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup Feta cheese, crumbled
  • Dried Parsley

Directions:

In a mixer, make the bottom layer.  Combine cream cheese, dill weed, garlic, and lemon juice.  Mix until smooth.

No matter what, lick the spoon.  This dip is not made correctly unless you do this step.

Spread the dill dip into a quiche dish, pie plate or something pretty.

Spread the dip all over.

You can stop licking the spoon now.  But, never, ever, ever lick then put spoon in dip.  That is double-dipping.

Double dipping is not allowed in Texas ever.  I’ve heard people have been hanged for doing that sort of thing.  Just kidding.  Sort of.  Just don’t do it.

Spread some more.

Greek Layered Dip with HEB Hummus

We love this hummus.  We could make our own but my kids wouldn’t eat it if they knew it was chick-peas.  They won’t eat peas.  HA!

Dice and chop all the veggies.

Layer all the veggies.  I just kind of spread them like on a huge pizza.

I then sprinkled with parsley.

That is it.

You have just witnessed the most EASIEST GREEK LAYERED DIP made possible.  Except, if you bought it from the store.  But, then that is not nearly as fun.

Spread hummus over dill dip.

Layer the veggies, cucumber, tomatoes, olives, and cheese.

Sprinkle with parsley.

Refrigerate.  Can be made ahead or right before serving.

Serve with pita bread, falafel chips or even with Veggie Chips.
