No-Bake Oatmeal Cookies Recipe (One of our Faves)

I thought I lost one of my favorite homemade cookbooks the other day. We are talking 20 something years of my favorite hard to find recipes. Then Eureka, I found it, in a place that it should never have been in, my kitchen. (Go figure!)

I realized how precious the recipes are to me. Probably, because they are tried and true, and no they are not the healthiest little things.

So, if you want to splurge on your points or your sugar levels, here is one of our families faves that reminds me of my childhood school days.

No-Bake Oatmeal Cookies Recipe
2 cups sugar
1/2 cup cocoa
1/3 cup milk (we use soy)
1 stick butter (none of that margarine in our house)
2 cups oatmeal
1/2 cup peanut butter
1/2 tsp vanilla (we use the real stuff from Mexico)

In a saucepan, mix sugar and cocoa over low heat. Add milk and butter. Turn the heat up to medium. When comes to boil, time it for 2 to 3 minutes. Turn off heat and add the rest.
Spoon out on wax paper or on foil. Cool. Enjoy!

    I make these too but as all our schools are NUT-FREE due to allergies, I make these without peanut butter and add 1/2 cup chocolate chips once they are off the heat.

    Oh and because we made them for a Halloween bake sale one year – we have called them Chocolate Bat Brains ever since 🙂

    We love these cookies too! I recently found a recipe that uses butterscotch chips instead of the cocoa. 🙂
