Easy Sandwiches for traveling

December 10, 2008 Lana

We just got back from a LONG trip in the car. Sometimes it was easier to just eat in the car then to stop and eat. Besides, I do anything to pass miles and keep the crew busy.
I received this recipe from a dear friend of mine, Selina. Thanks so much!
This is really so simple and delicious. My step-dad is Type II diabetic and he used it for his late night snack.
Awesome to Eat Sandwiches (I don’t know the name of these!)
1 loaf of Raisin Cinnamon Bread
1 Granny Smith apple, sliced thinly
1 block of cream cheese (you don’t use the whole package)
Turkey or whatever meat you like
Spread the cream cheese on both slices of bread. Lay a couple of slices of apple and meat in between the bread.

I always cut mine in halves. Soooo easy, cheap, and scrumptious.

I like raisin bread toasted, but not sure about the kiddos (mine). Yes, when we go on day trips, I pack a lunch always. p/b, meat (though we like salami), bread, fruits, and sometime veggies. I love cheese cubes too!! Thanks for sharing!

Oh yummy. I’ve never done this, but I’m gonna test it out for the boys for their lunches and see what they think. As for me, I sold!!

Sounds yummy! We often do long stretches in the car, only stopping for bathroom breaks and to refill the coffee thermos. Sounds good even if you omit the meat!
