The BEST Sweet Potato Casserole EVER

Truly, this is my most fave recipe ever, well for sweet potatoes.
Are you ready?!?
(Something happened to my picture…so I’ll have to take another one.)

The BEST Sweet Potato Casserole EVER and easy!

3 cups baked, sweet potatoes (I’ve used canned yams and they work too!)
1/2 cup sugar
1/2 cup milk
1 tsp vanilla
2 eggs
1 tsp cinnamon
Topping:
1 cup brown sugar
1/2 cup flour
1/4 cup butter, melted
1 cup chopped pecans

Preheat oven to 350 degrees.  Combine potatoes, sugar, milk, vanilla, eggs, and cinnamon and place in 2 quart baking dish.  I use my trusty KitchenAid Mixer and it makes it soooo simple!

Combine ingredients for topping and spread it on sweet potatoes.  Bake for 35 to 40 minutes.
Serves 8 to 10.

    I am from TX and I have a recipe for sweet potato casserole that is so similar to this one (adds butter to potatos)and YES it is the best in the world. My kids beg for it every Thanksgiving and Christmas! Thanks for this and now I can save a few calories knowing I don’t have to add the butter.

    I love easy recipes. I’m going to need to try this one. My recipes are usually a mixture of easy and hard — but the easy ones with the right flavors are so much fun to do. People always seem to be impressed and you can stand there with a smirk thinking “oh if only you knew just how easy it was…”

    Hey Banana, errr, I mean Lana! Stopping back to see how life is treating you, and to let you know that we tried the taco soup and seasoning. It was very good. The first day we loved it, two days later we reheated it and added green chili’s from New Mexico which gave it a good KICK! Both was are super. Thanks for sharing,

    Oh my goodness! I usually avert all things bake or cook. It’s a scary process for me. But this sounds soooo much better than opening a couple of cans and throwing marshmallows on top. LOL.

    I make this exact recipe every Thanksgiving. The only time my husband will eat sweet potatoes. it is amazingly yummy!

    mmmmm, this looks good! i may try this as an alternative to the old sweet potatoes with marshmallows roasted on top at thanksgiving time. thanks for the yummy nosh idea!

    I love candied pecans on my sweet potatoes! that’s how I make them for Thanksgiving. WAY cool!
