Chicken Tortilla Soup in a Crockpot

I’ve been making this for sometime!  It has become a staple in our home…all the kids like it!  That says a lot – 14 thumbs up!

Chicken Tortilla Soup
from Kiki’s Korner  (I realized my hubs couldn’t find it one day and so I needed to put the recipe on my blog so he could make it.  Yeah, it is that EASY a non-cooking hubs can make it!  Love those type of recipes!)

  • 4 uncooked boneless, skinless chicken breasts
    2 15 oz can black beans un-drained
    2 15 oz cans diced tomatoes with green chilies (Rotel)
    1 Cup salsa
    14 oz can Tomato Sauce
    Cheddar Cheese
    Tortilla Chips

Okay, this is super hard…ready?  

Open all cans – pour into crock-pot.

Oh, add tomato sauce and salsa too.

Cover and cook on low for 8 hours OR cook on high for 4 hours.

Just before serving, remove the chicken breasts and cut into bite size pieces and stir into soup.
(This is the part my hub likes.  He shreds it with forks.)

Then you can make friends – Pour over a bowl full of chips and top with lots of cheese!
