HOT CHOCOLATE
So, we have been on a serious diet. The South Beach Diet to be exact.
Both the hubs and I have lost weight. We are getting weak though.
We I wanted chocolate.
So I made this…low fat, low calorie, no sugar, dark hot chocolate.
Yeah, I know…low fat and good – they don’t match up.
But, this was soooo yum!
Hot Chocolate
Adapted from Hershey’s Hot Chocolate
- 1 packet of Truvia
- 2 1/2 teaspoons HERSHEY’S DARK CHOCOLATE Cocoa
- Dash salt
- 1 cup Almond milk
I mixed all the ingredients and put in the microwave for about a minute.
Stir really good.
Then ENJOY the goodness without guilt.
Okay, it might not be totally good for you…water is better. But, you can drink hot water while I’ll be drinking this cup of yummy!
I sipped with a smile.

Trying this in the morning. I have given up drinking coffee because I LOVE the creamer that are super high in SUGAR and I love hot cocoa so thank you very much!!!

I have become lactose intolerant and gave up drinking milk. But now we are eating low-carb and not worried about how much fat we ingest. Milk doesn’t work with low-carb, either – and fat free milk is worse for low carb than whole milk. But occasioally, we do want a treat of a bowl of cereal or a few cookies, and it just isn’t the same without milk.
I stumbled onto this concoction to replace milk and love it: unsweetened almond milk, and add a packet of sweetener and a splash of half ad half. Even if milk didn’t cause intestinal distress, the milk sugars are too high carb for everyday milk drinking. I don’t really care for the almond milk alone – the taste is too thin. But add the half and half and sweeten it with a no-carb sweetener, and it’s really good.
Cheesecake is one of the easiest recipes to adapt. If you’re doing low fat, you can sub low fat/no fat cream cheese and sweetener in the basic Kraft philly recipe. It’s only 4 ingredients – cream cheese, eggs, sugar, and vanilla. Instead of using the keebler cracker pie crust, either make it crustless or lightly toast almond flour and use it in a crumb crust recipe – butter, sweetener, and the almond flour mixed and pressed into the pan.
