There are some recipes – I just can’t live without! This is one of them! EASY, FAST, and DELISH!
This is one of the first recipes I made for my hubs when we first got married. I’ve seen similar recipes but never the same as mine but there probably is at least one – quiche is everywhere! (Of course, I make mine different every time – I try to use what I have on hand. This makes my husband cringe – he follows all recipes to the T.)
It has been changed quite a bit since I first started making it – all for the easier.
- 1 cup chopped onions
- 1 small can of sliced mushrooms
- 1 Tbsp of Canola oil
- 1 10 oz frozen spinach (thawed and well drained)
- 16 oz of fully cooked turkey ham
- 5 eggs
- 3 cups of cheese cheddar cheese (or whatever I have on hand)
- 1/8 tsp pepper
Saute those onions in a large skillet.
I run cool water over the spinach to defrost it. Then I wrap it in a towel to dry.
Sometimes I cut this in half and cube. Sometimes I use less. Sometimes more.
I know some people will want to use fresh but I like to use the can. No one ever notices. Just make sure to drain those babies before adding them to the skillet.
Mix in the spinach and ham. Cook until the moisture is removed.
We grab our lil’ sweetheart to crack eggs. You can do this by yourself but it is more fun with a sweet helper.
Those were farm fresh eggs from my Mom’s chickens. Thanks Mom!
Beat your eggs! After the ham/spinach/mushroom/onion mixture has cooled to warm – mix with eggs.

This is it after 45 minutes in a 350 degree oven!
Some other variances:
Top with picante sauce!
Use chopped broccoli instead of spinach.
Use chicken instead of ham.
Add some spice with jalapeños.
Use Monterrey Jack.
